Soya Chicken & Vegetable Bake



All ingredients in bold available at The Spice Emporium.

400g packet of soy chicken breast, sliced in 1x2cm pieces and marinated (recipe)

1 large onion, peeled diced into 4-6 chunky pieces

3 medium potatoes, peeled, diced into 4-6 chunky pieces

2 large tomatoes, grated

1 large tomato, finely chopped

Marinade (recipe)




  1. In a bowl, add veggie pieces to marinade and coat each piece well. Set aside.

  2. Line an oven tray with foil and lightly coat with oil, place soya and bake on 180C  for ± 30 minutes until brown. After 15 minutes turn soya.

  3. Once soya has browned, add marinated veggies to the tray.

  4. Add blobs of butter around the tray.

  5. Cover with foil and return to the oven.

  6. Bake until potatoes are cooked /soft.

  7. Serve with basmati rice or toasted bread.


Tip: If the bake looks dried out, add additional grated tomatoes. When checking if potatoes are cooked, mix the dish to ensure soya does not stick to the edges.
