China grass, also known as Agar Agar, is made from seaweed and is a vegetarian substitute for gelatin.

A general substitution rule is 1 teaspoon of china grass powder = 1 teaspoons gelatin powder, but this may vary depending on the ingredients used in the recipe. Acidic ingredients such as citrus fruits may require more china grass powder while fruits such as mangoes, pineapple and papaya will need to be cooked before using as they breakdown the gelling enzymes.

Storing Suggestion

1. In a pot, dissolve 1 tablespoon of china grass powder into 4 tablespoons of hot water (or liquid of your choice) Bring it to a boil and simmer for one to five minutes. Warm up the remainder of your ingredients and mix in the china grass. Leave aside to set.
