This delicious traditional sweet dish is made with fresh carrots, almost taking the guilt our of this dessert!

3 medium carrots, grated
1/4 cup milk
4 tbsp castor sugar
1/4 tsp cardamom (elaichi) powder
a pinch of saffron (kesar) strands
2 tsp fresh cream
1 tsp ghee (clarified butter)
- Heat the ghee in a broad non-stick pan and saute the carrots.
- Add the milk and stir till it evaporates.
- Then add the sugar and continue stirring until the mixture is slightly thick.
- Add the cardamom powder, saffron (mixed in a little milk) and cream and stir well.
- Serve hot or chilled.
