Bombay Dreams Trail Mix Recipe

Trail mix with an Indian twist! Inspired by the traditional, yet much more involved chevda snack, our recipe is quick – but packs a flavour punch.
Seasoned with chaat masala, which combines cumin, coriander, dried ginger, black salt, black pepper and more, it makes for a wonderfully complex and addictive Trail mix.

Serves 4
Cooking time 45 minutes

Ingredients

Ingredients in bold available at The Spice Emporium

100g Peanuts, roasted

100g Raisins

50g Puffed Rice (Basmati mamra)

100g Makai Powa (corn flakes)

± ½ cup oil, for frying

1 – 1 ½ tsp Chaat Masala

½ tsp Spice Emporium Kashmiri Chilli powder

Method

  1. Heat oven to 100C and roast basmati mamra for 30 minutes or until toasted.
  2. Remove from oven and allow to cool.
  3. In a medium pot, add enough oil until ± 2cm deep and heat.

  4. Test readiness of oil by dropping in one makai powa. Makai powa should sizzle and slowly rise to the top. Remove fried powa.

  5. Pour in remaining powa and fry until golden brown.

  6. Remove fried powa from oil and place on a paper towel lined bowl to drain and cool.

  7. In a large bowl, mix together all ingredients until evenly coated in spices.

  8. Store in an airtight container.

Tip

  1. If you don’t have Basmati mamra, substitute with unsweetened rice crispies, makai powa with unsweetened Kellogg’s corn flakes.

  2. For extra crunch – nuts can be roasted prior to mixing.
