This Gram Dhall with Brinjal Curry recipe by Priasha Pillay is a wholesome, traditional dish packed with incredible flavour. The nutty gram dhall is cooked until soft and paired with tender brinjal in a well-spiced curry, creating a delicious combination that’s perfect served with rice or roti.
Ingredients

500g Gram Dhall
1 Bay Leaf
1/4 cup of oil
Half an Onion, thinly sliced
1 tsp of Ginger and Garlic Paste
3 Chillies
3 tomatoes
5 or 6 small Brinjal cut in rings
Salt, to taste
Method
- Boil Gram Dhall and set aside

Heat oil and add whole spices, allow to heat through before adding onions and chillies to saute

Once onions are soft add the turmeric and masala and allow to cook for a minute before adding the ginger and garlic paste

Add the tomatoes and allow to cook for 2 mins

Add the cut brinjal and stir to combine

Allow bringal to cook for about 5 minutes

Add in the boiled strained gram dhall and salt

Add half a cup of water and allow the brinjal to cook all the way
Serve curry hot, with basmati rice or roti.
