This Gram Dhall with Brinjal Curry recipe by Priasha Pillay is a wholesome dish packed with flavour. The nutty gram dhall is cooked until soft and paired with tender brinjal in a well-spiced curry, creating a delicious combination that’s perfect served with rice or roti.
Ingredients

500g Moong Dhall
Half an Onion, thinly sliced
3 Chillies
1 tsp Ginger and Garlic Paste
3 medium Tomatoes, diced
2 small Potatoes, medium cubed
Salt, to taste
Method
- Soak moong dhall until the skins start to come off.
- Boil with turmeric till tender, then set aside.
- Saute onions until soft
- Add chillies and allow to cook
- Add ginger and garlic and stir to combine
- Add the turmeric and masala and allow to cook for a minute
- Add the tomatoes with a little water and allow to cook for a few minutes.
- Add the potatoes and half a cup of water, allow to cook until half done
- Add salt to taste
- Add the rinsed moong dhall
- With half a cup of water and allow to cook until the potatoes are ready.
Serve curry hot, with basmati rice or roti.
