This Gram Dhall with Brinjal Curry recipe by Priasha Pillay is a wholesome dish packed with flavour. The nutty gram dhall is cooked until soft and paired with tender brinjal in a well-spiced curry, creating a delicious combination that’s perfect served with rice or roti.

Ingredients

Half an Onion, thinly sliced
3 Chillies
3 medium Tomatoes, diced
2 small Potatoes, medium cubed
Salt, to taste

Method

  1. Soak moong dhall until the skins start to come off.
  2. Boil with turmeric till tender, then set aside.
  3. Saute onions until soft
  4. Add chillies and allow to cook
  5. Add ginger and garlic and stir to combine
  6. Add the turmeric and masala and allow to cook for a minute
  7. Add the tomatoes with a little water and allow to cook for a few minutes.
  8. Add the potatoes and half a cup of water, allow to cook until half done
  9. Add salt to taste
  10. Add the rinsed moong dhall
  11. With half a cup of water and allow to cook until the potatoes are ready.

Serve curry hot, with basmati rice or roti.
