Any curry connoisseur will tell you, no curry is complete without a pickle on the side. Each scoopful of curry is immediately followed by a bite of pickle. Pickle enhances the curry by adding another dimension of flavour, a bit (or a lot!) of chilli, flavourful spices and some crunch. Eat on the side of a curry, or for a takeaway lunch, pour out some curry in the centre of a roti, top with pickle and wrap up in a roll. It can also be enjoyed on its own between two slices of bread!
We’ve specially blended our pickle masala to make it as easy and as flavourful as possible. It’s an all-in-one spice that contains a blend of chilli, salt, fenugreek, mustard oil, turmeric and asafoetida and more. All that needs to be added is oil and a selection of fruits or veggies.
It’s really so easy, it doesn’t even need a recipe!Â
The proportions of masala, oil and fresh ingredients is entirely up to preference, so play around with it.Â
Common variants in a mixed veggie pickle are carrots, green beans, fresh chilli, cauliflower and bor.
Fruit is also great for pickling and diced green mango, pineapple and halved kumquats are ideal for individual flavour variants.Â

½ – 1 cup The Spice Emporium Mangal Pickle Masala
2 tbs oil
½ cup carrots, thick julienne
½ cup green beans, split down the middle and julienned
4 chillies, split down the middle and julienned – optional

Method
- In a bowl, mix The Spice Emporium Mangal Pickle Masala and oil together.
- Add in veggies and mix well together.Â
- Store in a jar, refrigerate and eat within 3 weeks.Â
